Inspector Comment: An employee in the warewashing area handled soiled dishes and then proceeded to handle clean dishes from the dish machine without washing hands in between.

14 4-601.11(A) Pf Food Contact Clean to Sight and Touch - EQUIPMENT FOOD-CONTACT SURFACES and UTENSILS shall be clean to sight and touch.
Inspector Comment: Roughly 15-20% of plates stored as clean on the serving line have visible food debris on them.

14 4-702.11 P Sanitizing Before Use, After Cleaning - UTENSILS and FOOD-CONTACT SURFACES of EQUIPMENT shall be SANITIZED before use after cleaning.
Inspector Comment: Chlorine dish machine is reading 0ppm and quat sanitizer at the 3 compartment sink is reading 0ppm. Warewashing is being done at the time of observation. Rinse Aid and Chlorine probes for dispensing were flipped at the dish machine.

COS, PIC remade quat sanitizer at the 3 compartment sink and rewashed dishes, PIC flipped chemical lines for warewashing machine, quat sanitizer is now at 200ppm and chlorine dish machine is at 100ppm.
20 3-501.16(A)(2) P TCS Cold Holding - TIME/TEMPERATURE CONTROL FOR SAFETY FOOD (TCS) shall be maintained at 5°C (41°F) or less.
Inspector Comment: In the refrigerated make table on the expo line, the following items were found out of temperature;
MOS salsa (51F/53F), MOS ranch (49F/52F), MOS tartar sauce (49F/52F), MOS chantilly (55F), Blue Cheese dressing (45F/47F/59F). PIC states items have been in cooler since 08/16. Ambient temperature of the cooler is 57.2F.

21 3-501.17(B) Pf Pf - Date marking (Commercially prepared, opened, held > 24 hours) Refrigerated, READY-TO-EAT, TIME/TEMPERATURE CONTROL FOR SAFETY FOOD (TCS) prepared and PACKAGED by a FOOD PROCESSING PLANT shall be clearly marked, at the time the original container is opened in a FOOD ESTABLISHMENT and if the food is held for more than 24 hours, to indicate the date or day by which the FOOD shall be consumed on the PREMISES, sold, or discarded when held at a temperature of 5°C (41°F) or less for a maximum of 7 days and: (1) The day the original container is opened in the FOOD ESTABLISHMENT shall be counted as Day 1; and (2)The day or date marked by the FOOD ESTABLISHMENT may not exceed a manufacturer's use-by date if the manufacturer determined the use-by date based on FOOD safety.
Inspector Comment: In the double door RIC on the expo line, there is an opened gallon of 2% milk without a date. PIC states item was opened 08/15.

26 7-102.11 Pf Common Name (Working containers) Working containers used for storing POISONOUS OR TOXIC MATERIALS such as cleaners and SANITIZERS taken from bulk supplies shall be clearly and individually identified with the Common Name of the material.
Inspector Comment: On a shelf above the warewashing area, there is a clear container with blue liquid in it without a label. PIC states it is sanitizer.

NOTICE OF NON COMPLIANCE WITH KANSAS LAW

The Kansas Food, Drug and Cosmetic Act, effective July 1, 2012 includes K.S.A. 65-619 et seq. and regulations promulgated pursuant thereto and grants the Kansas Department of Agriculture the authority to regulate food establishments and food processing plants

The Kansas Food, Drug and Cosmetic Act requires that all violations shall be corrected no later than 10 days after this inspection unless otherwise directed on this form.

Failure to comply with the food safety law and its regulations may result in embargo of non-compliant products; immediate closure of your establishment; civil penalties of up to $1,000.00 per violation; denial of license renewal, modification, suspension and /or revocation of any license or authority issued pursuant to the food safety law; and/or any other penalty authorized by law. Pursuant to K.S.A 65-619 et seq, licensees issues authority under Kansas Food, Drug and Cosmetic Act may apply to the secretary for an extension of the time prescribed above.
