Inspector Comment: One stack of meat and cheese trays is stored directly underneath raw sausage products. COS - PIC removed the stack of trays to be stored in a WIC (walk in cooler)

TCS Cold Holding - TIME/TEMPERATURE CONTROL FOR SAFETY FOOD (TCS) shall be maintained at 5°C (41°F) or less.
Inspector Comment: At the oval bunker, salad kits are filled over the chill line and have a maximum ambient temperatrue of 47F. PIC stated these were filled within the last hour. COS - rearranged cooler so no stacks of salad kits on the bottom level are higher than 2 kits.
In the end cap containing raw pizzas, there are two stacks on the lowest section which are over the chill line and the top boxes have an internal tempertaure of 47F. COS - voluntarily discard 3 five cheese garlic breadsticks, 2 buffalo style ranch chicken flatbread. The push-back shelves of boxed cut leafy green varietes have an ambient minimum temperature of 61F. PIC stated these were stocked last night. Products include: spring mix, crunchy greens, baby crispy green leaf, baby red & green leaf, baby spinach & spring mix, baby arugula & baby spinach mix, baby arugula, spring mix. Internal temperature is 57F. Approx 30 boxes. COS - voluntary discard Approx 20 boxes of the product mentioned above have a package temperature of 40-42F and were left on the shelves, one hour later they have reached 50-52F. COS - returned to WIC produce cooler for rapid cooling. |
